Mauviel M'Heritage M150B 6526.22 8.6 Inch Round Frying Pan


A great product
Beautiful, impeccable quality. A perfect size for a good fried steak (or anything) or a spanish omelette, which is what I use it for most of the time. If you live alone, this is your perfect frying pan for quick, single serving foods.
Heats evenly on medium heat
Sometimes I just have to cook on medium heat. When I do, I reach for a pan with a high copper content. I finally decided to turn the copper content all the way up to "11." So I bought a Mauviel M'Heritage M150B 8.6" Round Frying pan.

The Mauviel M'Heritage M150B 8.6" Round Frying pan works great for a little light duty cooking. These pans are a decent compromise in that they are copper pans that have a thin stainless steel liner. Stainless steel and copper have wildly different reactions to salts and acids, so you'll want to watch what you are doing. Just read the directions that come with the pans and it'll last forever.

Mauviel M'cook 5611.24 3.3-Quart Saute Pan with Cast Iron Handle


Excellent performance/proportions
I purchased this pan along with a lid from a different website than Amazon, and have had it for about three months. Overall, I'm very satisfied.

This pan has a great heft to it, which means that you can stir or manipulate the food inside one-handed without the whole thing sliding around.

The interior stainless, while a little bit stickier (because its slightly less finished) than other clad cookware, performs great and cleans up wonderfully. I always hand wash my cookware, and this item looks brand new on the outside. The inside shows use from metal utensils, but that's part of the life of a stainless pan.

The cast iron handle will (slowly) heat up as the pan is left on a burner, but I actually find it to be a good indicator of the pan's heat. Also, I find the handle super comfortable and easy to maneuver when pouring. The only disadvantage is that it's important to dry the area around the handle well to completely avoid rust. Mauviel M'heritage 6501.16 250c 1.9-Quart Sauce Pan and Cast Iron Handle


Great pot, perfect copper and durable steel lining
Copper is known for its heat conductivity and this one pot was my first venture into the realm of copper pots! I'll never go back! The heat propagates evenly and quickly to the food, cooking faster and better. The steel lining is durable and prevents food from touching the copper, which is not healthy.

It is a heavy pot, so not recommended for anyone who is not ready to exercise his/her muscles a bit... Another disadvantage is that the handle does get very warm, not hot, so it is recommended that you do not hold it with bare hands after it has been cooking for a while. And it is not cheap.

All that said, nothing beats steel lining and copper for quality cooking. If you are just looking for a decorative piece (I am surprised people would buy pots just to hang them on the wall but there it is) buy one of the cheaper and lighter models.

Buyers BEWARE!

There are 2 Mauviel M'cook 15.7 x 11.8-inch roasting pans. This one, item number 5217.15 has a thickness of only 1.5mm thickness. The description is claiming this pan is 2.6mm, IT"S NOT. If you actually want the pan with 2.6mm thickness you need to look for item number 5217.40GWP.Mauviel 1830 M'cook - 15.7" x 11.8" Cast Stainless Steel Roasting Pan

From the Sur La Table question and answers about this roaster. "this roaster is a special value made for the holidays.... this pan has a 1.5 mm thickness, while the original Mauviel M'Cook roasting pan has a 2.6mm thickness." [...]

It's too bad sellers don't give correct descriptions of products. This is probably a really nice pan but I'd be pretty mad if I had bought this product thinking it was 2.6mm thick and later found out it is 1.5mm thick.
Not 2.6mm! This is the 1.5mm model
UPDATE: I just noticed that the description is now correctly stating the 1.5mm thickness, so I thought it appropriate to update - adjusted my rating to 3 stars (given the price).

I will start by saying that the 1.5mm pan is still nicely made and a totally usable item. Except they charge you for the 2.6mm model (5217.40) but they give you the 1.5mm model (5217.15) - now THAT'S unfair. I reported this, but have yet to see the description change.

I actually saw the same travesty at Sur La Table. They have the 2.6mm model on the bottom shelf, where all the Mauviel stuff is. It costs $199.99. And by the entrance, on a special display they have the 1.5mm model (which looks identical unless you know to compare the thickness and model numbers) and it too costs $199.99. This is misleading and deceitful. And yes, you CAN see the difference when they're side by side, although it's not as drastic as you'd want.

10/9/13 Update - FYI, I have a habit of keeping the packaging of things that i buy for quite some time after opening, "just in case." I happened to be clearing things out and was ready to toss the packaging when I noticed that the Mauviel sticker that I stuck to the box notes that the pan I received IS 2.6mm. How odd! I highly suggest those complaining about the "thinness" of the pan examine the packaging - you may have actually received a 2.6mm pan without realizing it - no wonder my pan was so heavy. I'm even more pleased to have discovered that I received a 2.6mm pan since I got the pan for a steal on amazon - the 2.6mm was going for $250 last year on several other websites.

Mauviel M'Heritage M250C 6501.17 1.9-Quart Saucepan with Lid, Cast Iron Handle


Copper Pot
Mauviel really delivers: I was a somewhat skeptical about their claims about how quickly copper responds to heat changes, but once I started using the saucepan, I was stunned to find that they were not exaggerating. I love the heft of it (important to note that cooking becomes an upper-body workout with pans like these) and the glow of polished copper is just gorgeous. Be prepared, however, to polish it every other use if you want to keep that bright glow, but know that ordinary Wright's Copper Cream will make the job incredibly simple and quick. I intend to try the Copperbrill cream recommended by Mauviel, but I am having a very hard time imagining how it could be better than Wright's, as it is about 5 times the price (hence my high expectations).
love this saucepan
I received this for Christmas last year and love it. We live in Mexico and my burner is not the best- but this pan makes my life easier.
The real test came when making brittle- i've tried thinner pans, non-sticks, but the heat would not be stable enough and either burn (trying to get even temperature ) or not reach the desired temperature. No problem with this pan. The copper just gobbles up the heat and spreads it evenly around. I'm asking for the 3.5 Qt for this Christmas ;)
Worth the money!!!
Top notch cookware, I have used them all, but this is in a class of its own, I only hope to be able to afford more pieces as soon as I can, Love it!!!

Mauviel M'Cook 5221.20 8 Inch Steamer Insert, Cast Stainless Steel Handle


great construction
I bought this steamer to interface with my Mauviel M'Cook 5210.21 3.7 Quart Saucepan with Lid, Cast Stainless Steel Handle. Though sold separately, they are clearly built to go together. The steamer fits perfectly into the saucepan. The seal is air-tight and is the result of precision engineering on the part of Mauviel.

Other than the quality and construction, this is a great tool for steaming vegetables on your stove. You simply add some water to the saucepan and then boil it with the steamer insert on top. The lid from the saucepan fits beautifully on the steamer (again, as if they were built for each other).

Unlike an All-Clad steamer set that I bought and returned, the quality of this steamer insert is equal to the actual Mauviel pots and pans that go with it. It is made in France, side-by-side with the other pieces. For some reason All-Clad feels compelled to lower the quality of...

Mauviel M'Heritage M150B 6537.40 16-Inch Paella Pan with Bronze Handles


not nearly as good as the price implies
I ordered this pan from a certain high-end cooking store, and they backordered it and then did not ship when promised, so I had plenty of time to anticipate the arrival of the pan and get excited to use it.

Unfortunately, once I finally did receive it and used it, I was sorely disappointed. Based on the high price tag and the reputation of that high end store, I was thinking I would be getting a pan that was a joy to use. Not so. First I found when cooking with this pan that it did not heat anywhere near as evenly as I expected. Directly over the burners, food cooked too quickly, while on the sides food barely cooked, which forced me to regularly rotate the pan - something difficult to do with a pan whose handles get very hot. The pan is touted as being thick 2.0mm copper, but I have other pans from other manufacturers that are 25% thicker than that, and this pan evidently needs to be thicker.

Great Pan
Copper is expensive. This pan, along with all of the Mauviel M'Heritage is solid copper, therefore it is expensive. Keep in mind this pan is 16" and you won't be able to properly execute a paella on your home cooktop. You may want to consider an LP Paella burner or other outdoor large cooking surface to do justice to this amazing pan. The mirror finish they put on this is absolutely incredible, I couldn't wait to bury in embers as soon as I opened the box.

Comparison of Copperware; Mauviel finish is too hard to keep clean, but heats evenly
COMPARISON BETWEEN FALK AND MAUVIEL:

Falk and Mauviel are the top two copper cookware competitors, and both manufacture 2.5mm thick copper cookware (but Mauviel does manufacture some lines of cookware with much less copper; see my notes below). Falk only sells directly to the public via their US distributor's website (you can search the web, and find their direct sales online at their website).

I purchased a 1.3qt Mauviel saucepan with lid and a Falk Sauciere 1.4qt with a lid. This was not a scientific test, nor was it a comparison of equals - the sauciere is 7" (almost 7.5") in diameter, and the Mauviel saucepan is deeper and narrower, with a 5.5" diameter. I filled each with 3 cups of cold water, and timed their boil on low heat (warning - high heat will discolor the copper!) on a large gas Jenn-Air cooktop (propane gas). With lids on (but checking frequently after the first 10 minutes), the Falk boiled at 14 minutes and the Mauviel at 14 minutes 30 seconds -...

This is a first rate piece...I recently found a Mauviel saute pan at a local store on discount (because it had no lid), so I searched online and found this one. It is a perfect fit and match made in heaven. It completes my great find!

Mauviel M'Heritage M150B 6535.25 10.4-Inch Crepe Frying Pan with Bronze Handle


Increpeable! Incredible Crepes
I have tried at a total of 6 different crepe pans and this one by Mauviel has topped them all. I was apprehensive because of the cost and because I couldn't believe that the Stainless surface would be better than the other pans I have tried (mostly non-stick including Calphalon).

For my first experience with the pan, I used the recipe for crepes that came in the box. The first (and all of the other crepes) came out beautifully and tasted heavenly. They were very light and turned the perfect color. And... it seemed to do better at the higher heat I was using than the non-stick pans I used prior to it.

I'm glad I didn't say anything about my new pan and the new recipe I used because I got an un-biased reaction to the consumption... they loved them!

Bravo! This one pan makes me want to try the other Mauviel (expensive) products.

I do want to mention that the handle did get hot. I could pick up the pan but if you have sensitive hands... you may...
Wish All clad had a crepe pan
If you have ever used an allclad cookware, this will be a disappointment. Heat capacity is just not as good. With all clad, I heat the pan at medium heat and then reduce the heat to low. This pan will cool down when you reduce the heat...means you have to cook at high heat...means prone to burning, etc. I am going to return mine...and use a 10" all clad fry pan instead.

Mauviel M'Passion 6550.24 9.5-Inch Tart Tatin Pan


First Rate, Gorgeous, and Performs Beautifully
See images I added. This was my first tarte Tatin ever, and next I'm looking to make one using quince and mix in some golden raisins amongst the apples (a tip from cookbook/lifestyle author Georgeanne Brennan).

I was worried about doing the flip onto the plate, but everything released beautifully and kept its shape, and nothing went flying. The recipe that came with the pan (through Williams-Sonoma) was perfect, except I added a step of putting the apples into a bowl of water with lemon juice so they wouldn't brown while I was doing all the cutting and peeling. An OXO apple corer was a great help in speeding up the process and giving me uniform slices after I peeled the apples.)

After seeing how easy this was I can't imagine using any other pan for tarte Tatin, but I have always loved using copper, whether tin-lined or stainless-lined. It just heats up and cools down very qucikly. Even using All-Clad is maddeningly slow and unresponsive after using copper...

Mauviel M'heritage 250c 6502.28 4.9-Quart Saute Pan and Cast Iron Handle


Buy it for your own use and plan for your grandchildren
This is the top performing saute pan for gas ranges (or woof fired, for that matter). If you have electric, do not spend your money here. If you want a rounded corner from bottom to side, this is the wrong shape pan for you.

The 2.5mm thickness of the copper is the key to performance in this pan. Copper in and of itself has little utility. All those thin copper or copper coated pans are of no additional value. When you have it this thick, you get fast and even heating. And it does not hold heat, which means better control on and off the flame. Faster to sizzle, faster to stop from overcooking or burning. The heat conducts strongly UP the sides of the pan twice the rate of even the best aluminium. You are paying for this level of performance.

As for those complaining about the handle getting hot, do not use high heat AND hold onto the bare handle. This is the kind of workhorse you slide under a fierce broiler, or finish in a 700 degre oven. You cannot do...
Cooks great, handles are worthless
Although this pan cooks very well, the handles for both the pan and the lid conduct heat nearly as well as the pan. They both quickly became blistering hot (essentially the same temperature as the pan) and nearly unusable. It is appalling to me that cookware that is as expensive as these could not be designed with functional handles. In the future I'll stick with All-Clad.

Perfect Saute'
It's a Mauviel; that should explain a lot.
This is the pan I have been looking for! It is the perfect size for near daily use, and an even more perfect fit for my whisk and/or wooden spoon when reducing sauces. I looked high and low for the pan that these utensils would reach into the edges (between bottom and side) to completely mix the sauce without missed spots along those edges. This is it!

The best pan I've ever owned
Everything about this pan is perfect. It heats evenly. The cast iron handle is heavy duty and firmly riveted to the body of the pan. Plus the cast iron handle has already been coated so there is no need to mess with seasoning the handle to prevent rust. The interior cooking surface of the pan is high quality stainless steel. The exterior of the pan is copper. I use this pan on a gas range and in a gas oven.

Honestly, Love It !!
LOve it, love it, love it !! Marvelous it is . I fried eggs first, compelling . Maybe my third year on it now . Am male, so for girls like my sister or my mom maybe it is (a) slightly too heavy to be happy in everyday use, (b) honestly it has a good balance but you got to balance it well or it can slip left to right slightly easily because of its good balance and heavy weight .

Oh, if you are bothered by a long handle, there might be a problem, but for me I like a long handle, so its space-eating and inconvenient length seems positive to me, although I acknowledge that if I like the average length of the pan handle, I would have been bothered by this .

I got it for $204 in December 2010 . I have to note that I own only really few kitchen supplies, comparing to average households, very few pots and pans, and just slightly more knifes than pots and pans . So I am really happy--if I can keep this pan all my life, I consider it cheap !!
Great Pan!
Love this Pan! I cooked three eggs over easy quicker than a non-stick pan and faster than a non-stick pan. The whites of the eggs cooked beautifully without any color and yolks were perfectly overeasy and creamy (using farm fresh eggs). Cleans easily, just like a nonstick. There is no comparison to copper pans. Go for the 2.5mm it's of better quality and will last a lifetime. Succomb to the expense and buy the better tool. You won't be sorry. Mauviel is perfection!

Mauviel M'Cook 5214.28 11 Inch Round Non Stick Frying Pan, Cast Stainless Steel Handle


Worth the price
You get what you pay for. Mauviel is the absolute top of the line cookware, and it is apparent from the first time you pick up this pan that is a cut (or three) above the pans you buy at the big box stores, or even the mall cookware stores. It's heavy and it holds up well. Heat distribution is virtually flawless and the non-stick surface is much more durable than in other pans.

Great pan for small quantities
Excellent pan. Usual tiptop mauviel quality. Love the cast iron handle on this one as most of my others are bronze. Great size for small quantities. Also, customer service from amazon.com in getting this to me in time for Christmas was AMAZING.

I really enjoy cooking with this little pan, it is the perfect size for the nights that I am cooking for just me.
The pan heats quickly and cooks evenly and is easy to clean. I am thinking about buying many more pieces of the Mauviel copper cookware.
