Culinary Institute of America Masters Collection 3.5-Quart Saucepan with Cover


The Best Cookware
Wonderful addition to my CIA Masters cookware. I watched until the price was lowered. LOVE IT> Perfect size. Perfect cookware. Arrived before delivery date. In Excellent condition. Very well packed. Thank you. Love it.
Disappointed, CIA 3.5 saucepot
Well I thought I had met Viking's match. I bought the one qt. CIA pot and it looked ok, but it was too small for what I needed. I ordered this item (3.5 qt. saucepot). At first, it looked good, but I do not bring stuff into my kitchen until it is washed. I put this pot in the sink with some soap and let it sit for a while. It developed a "rust" spot in the inside center. I wiped the spot away and it formed again. It was probably an iron grain or other impurity in the stainless steel. Anyway it was a flaw. I sent it back. I'll not have anymore CIA. I know Viking is expensive, but it's for life, and your kid's life, and on. I know All Clad, but I don't like their handle style.

Culinary Institute of America Masters Collection 12" Sauté Pan with Helper Handle


Great Saute Pan
Actually, I'd wanted a 12 inch All Clad Saute pan, but they don't make a 12 inch saute with a helper handle on the opposite end. This (CIA Masters Collection) pan DOES have one, and is every bit as well made (if not better, since it has an aluminum AND copper core). And like All Clad -- it's hefty -- so when you add food it helps to have the helper handle. It performs flawlessly. I'm glad I found one that meets all my requirements.
Terrific saute pan
Like other reviews have pointed out, this is a large, heavy, solid pan.

That said, it's definitely worth it. It heats very evenly (make sure to pre-heat for a few minutes and use some real oil/butter, not the aerosol stuff), cleans up well (polish with Bon Ami if desired - never use steel wool) and feels like it's been forged of one continuous piece of metal (unlike other pans where cheap rivets make the handle attachment wobbly).

This has become my go-to pan for most stove-top tasks. Admittedly it's a tad big for some small jobs (a single fried egg looks comically tiny), but that's no reason not to buy.

This purchase has made me want to get more pieces from the CIA Masters Collection - I like the brand better than All-Clad for both performance and price. FYI, this also comes in a 10" version and both sizes are available with a nonstick coating.

Panvalue
Pan is heavy, and needs the auxiliary handle. It heats well and evenly on low heats. We bought this for specific use on a glass top range. I am not a large person, and found that I can pick up the skillet with my left hand, the trick being to use the heighth and length of the handle against my forearm for support. I can transport it to the table that way, serving with my free hand. I believe it was great value for the money.

Culinary Institute of America Masters Collection 10" Sauté Pan


Best I've Owned
Purchased this recently and after two meals I already know it's the best sautee pan I've ever owned. It's weighty but not unwieldy, feels great, and spreads heat perfectly. It's also already responsible for the best omelette I've ever made and is in immediate full use as it's a huge upgrade from "the usual". With a lifetime warranty, I doubt I'll ever own another sautee pan.
premium cookware
I recently started getting serious about cooking and decided it was time to upgrade my cookware. After doing considerable research I was settled on allclad. I am glad i went to a store and picked up the pan first. after picking up the allclad pan i felt it was a quality pan but the handle was quite uncomfortable compared to the cia pan.

this is the best pan I own. It is a beautiful piece of cookware. It sits on the top of my stove begging for me to heat it up until the oil begins to shimmer and toss in fresh sea scallops until they are a beautiful golden brown.

It cleans up easily, heats evenly, can be transferred from the stovetop to under the broiler,and because it isnt nonstick you can produce a nice fond after cooking a protein that can be deglazed and turned into a nice pan sauce.

Buy with no remorse. I recommend this brand to anyone interested in investing in quality cookware. I plan on replacing most of my old nonstick with the rest of the...
Very good
Solidly constructed weighing in at 3 pounds, 1 ounce. The sides have a mirror finish and the interior as well as the bottom portion that contacts the stove have a brushed finish. The brushed finish is rougher than the brushed finishes on most stainless skillets. I was concerned food might stick to it, but was pleasantly surprised. Food cooked great and cleanup was easy!

I like the long arched handle, although it can make a heavy saute pan seem even heavier.

One of the big selling points was that it had a copper layer. The copper layer is actually quite thin (see my uploaded image). The pan cooks great, but I think I was expecting a little more copper to help justify the high price.

The pan is not marked with the country of manufacture, but the cardboard box says it is made in China.

I would buy it again.

Culinary Institute of America Masters Collection 12" Non-Stick Sauté Pan


GREAT PAN
I LOVE this saute pan!!!!! The helper handle is a must with a pan this large and it cooks wonderfully. Glad I got it!!!!
Sauté pan
Super sauté pan. Heavy construction. Like the second handle for ease in picking it up. Looks like good nonstick quality.
Disappointed!
I bought this identical product 4 years ago, and it lasted a good 4 years. I don't know if the coating has been changed, but the one I just bought - the non-stick coating is already starting to really peel after barely 1 year of use - very unimpressed!

Culinary Institute of America Masters Collection Saucier with Cover, 3-Qt.


LOVE this pan!
I am very clear about my criteria for cookware. Pans must feel substantial without being too heavy, must heat evenly, must be easy to clean, must be adaptable to a variety of uses, and finally, must look good hanging in my kitchen. This pan easily meets all these criteria! Since I received it (excellently packaged, as fine cookware should be), I find I use it often, always with excellent results. And I love pairing it with the CIA steamer insert. Now that I am retired and have more time to enjoy cooking, I have begun treating myself to cookware I can truly be excited about. I am so glad I decided to purchase this piece.
If you try it, you'll like it
This is my first saucier, and I can say that it is a wonderful shape in which to cook. Whipping, or stirring with a silicone spoon, is so much fun when the shapes match!

This particular saucier seems to do its job very well, with even heating and good heat retention. It is also, IMO, very attractive in a utilitarian way. The 3-quart size is perhaps too large when making a bit of sauce for two, but quite nice for something like gumbo or risotto. I think someday I will get the 1-quart as well, and most certainly stay with this manufacturer. The top for this pan also fits 1 or 2 other CIA pots. There is also a steamer/pasta insert available.

I would also like to point out that the weight of the handle is NOT so much as to unbalance the empty pan, as happens with some of my All Clad pans that have difficulty laying flat on my electric stove.

Culinary Institute of America Masters Collection 1.5-Quart Saucepan with Lid


CIA Masters Collection Copper Clad Stainless Steel 1.5 Quart Saucepan with Lid
I would love to have attended the Culinary Institute of America. However, that didn't happen. So, the next best thing was to try one of their sauce pans. It was more expensive than most similar pans but, worth every cent. It has perfect balance, weight and heat distribution. After using this saucepan I now plan to replace most of my cooking pots and pans with CIA products (I am also planning on winning the lottery). If you love to cook you will love this saucepan.
Great
These pans are costly but so worth it!! They really clean well ( no DISH WASHER) and the food cooks better in them. My frying pan I use makes the BEST omlettes!! Make sure you purchase a lid too, they all dont come with a lid.
