light weight, well balanced
I am a country club chef and i use this knife for everything. It has everything to offer and is affordable. Razor sharp edge out of the box and easy to resharpen. If you only use double bevel knives you really need to try japanese steel. This knife is so versitle. The thin blade is great for slicing fish and cutting meats. Chopping and dicing vegetables is effortless. Masahiro is the best!
Very solid knife but not as good as the Shun knives + professional chef review
This is a solid knife. I bought this one plus the 7 inch chef's knife for my wife. We enlisted the help of a professional chef to compare these against the Shun knives. To find the full review with videos of the two knives facing off (there's also a video of the Shun 1000/6000 grit whetstone) just Google "TrekAdvisor Masahiro" and it should come up.
