Shun VG0008 Blue Steel 10-Inch Kiritsuke Knife

Good knife, it is two side blade.
I am Experience Sushi Chef, I were collect a lot knife;Traditional Kiritsuke knife sashimi should be one side blade. Shun Kiritsuke knife showed photo looks just like one side blade, price only half even more less than sashimi kiritsuke knife. When I got this knife, I know that it is Shun kiritsuke knife AD photo let me made mistake . From testing, I recommend Shun Kiritsuke knife use for cut vegetable or sushi roll, it is very good sharp knife, can keep sharp longer than other same price knife. If you want use for cutting sashimi, one side blade sushi knife will be more better.
Awesome Knife
I'm a culinary professional with a major luxury hotel brand and I absolutely love this knife. It plows through almost anything it comes up against. Not to mention that it is stunningly beautiful. Well worth the money. The only minor downside is that it requires more care than some might want to take.

The best
It is hard to find a better knife. This is always being used at our house. It is costly and requirers extra care, but it is more than worth the cost.

Mcusta-Zanmai HKQ- 3007D Gyutou Knife, 9.4-Inch

5 Star Knife!!
This is hands down the best knife I have ever owned! I work at a 5 star / 5 diamond hotel in the US, and there is a huge variation in the product that crosses my cutting board, and this knife has handled it all incredibly well. From very finely dicing shallots and chives, to breaking down pigs / fish / rabbits, this knife is a champ. The factory sharpen is the sharpest I have ever felt, and I have been to quite a few knife shows with the worlds best cutlery makers.

If there were any complaint at all on this knife, it would be how fast the beautiful lettering on the knife fades away. After using this knife every day for two months, the markings were very faint. Which is only cosmetic.

This steel holds a razor thin edge, at an even lower degree angle than it ships with. Of course that requires more sharpening, but it will still hold for four - five days with hours of use a day.

Two words - BUY IT!!!
