Awesome knife
This is really a great knife and was an excellent addition to my growing collection of globals. i opted for the heavyweight instead of the flexible because i thought the rigid blade would allow me to steer it better. I have a friend with the flexible so i have tried both and i prefer the heavier, non-flexible blade.
What a Great Knife
My wife and I love this baby. It cut the time in half for my wife to debone a pork shoulder.
Terrible edge
Lets start out with the fact I'm a professional meat cutter. I use boning knives everyday and went looking for a top notch, high quality knife. After extensive research I decided with this product. I am disappointed.
My twenty dollar victorinox came with a better edge, not only that, it STILL has a better edge after two years of daily use. My second complaint is that it doesn't have a decent point to it. Has this knife already been jammed into a steel? For $140 (After tax and shipping) this is ridiculous.
I suppose it's a good hunk of stainless steel, BUT is NOT usable out of box. First thing I have to do with this knife is sharpen it, and put a good point on it.
Bottom line, go with victorinox over global. I haven't put this knife to the true test, but only years of work will determine that.
